STRAWBERRIES AND CREAM CAKE

BAKING INSTRUCTIONS
#1. Preheat oven to 180°C (160°C fan-forced)
#2. Grease 2 x 22cm cake pans with butter and line with baking paper.
#3. Combine flour, baking powder and salt in a large bowl. Set aside.
#4. In another bowl, beat the eggs with an electric mixer on a medium setting for 30 seconds.
#5. Slowly combine the sugar to the egg mixture with the mixer on low. Beat for 5 minutes or until mixture becomes thick and opaque.
#6. Add butter and milk to heatproof jug and microwave until warm (approx 1 1/2 minutes). Set aside.
#7. Grab your dry ingredient bowl and create a well in the centre. Slowly add the egg/sugar mixture to the bowl with the electric mixer on low/med. Continue to mix until all combined.
#8. Combine milk, butter, vanilla extract and vegetable oil one at a time into the bowl with the electric mixer on medium. Mix for approx. 2 minutes.
#9. Pour the batter into the cake pan and cook for approximately 30 minutes or until golden.
Repeat Steps 1-9 for Second Cake
DECORATING INSTRUCTIONS
#1. Once the cake is cooked remove from oven and allow to cool.
#2. Wash your berries. Cutting your strawberries into halves and removing ends. Set aside.
#3. In a large bowl, add your thickened/double cream and whisk with your electric mixer for 4 minutes or until cream has thickened.
#4. Cut the top off the cake that has risen the most to make the cake flat.
#5. Pour your raspberry or strawberry jam on top off the cake with the top cut off. Spread evenly.
#6. Pour and spread your whipped cream thickly on the top of the jam until the top of the cake is completely covered.
#7. Grab your second cake and place on top of the cake with cream and jam.
#8. Add 100g Icing Sugar to a sieve and cover the top of the cake.
#9. Add your remaining 100g of icing sugar to a bowl with your red/pink food colouring and mix together until the icing has become pink. Use an electric mixer.
#10. Now add the pink icing sugar to a sieve and cover the top of the cake.
#11. Decorate the top and the base of the cake with your berries. Enjoy!
